bbq beef tri-tip with coleslaw

last night i made some slow-cooked bbq beef tri-tip with some coleslaw!


bbq beef tri-tip
rub spices onto beef:

  • onion powder
  • garlic powder
  • mustard powder
  • cayenne powder
  • paprika powder
  • chili powder
pour on some apple cider vinegar
place in slow cooker on low for 8 hours


bbq sauce
i made "Son of Grok" paleo bbq sauce: http://www.sonofgrok.com/2009/06/sog-zesty-bbq-zauce/
because im tired of wanting bbq and all the store-bought sauces are loaded with sugar!

  • 1 6oz can tomato paste (preferable organic)
  • 1 to 1.5 cups of beef stock (I made my own but if you buy, you want it without salt)
  • 3 Cloves Garlic
  • .5 of an onion
  • 2 tablespoons dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Extra Virgin Olive Oil (EVOO)
  • 1 teaspoon sea salt
  • 2 tablespoons chili powder


this recipe is a good base but i like a lot of kick to my sauce so i added lots of cayenne, smoked paprika and chili chipotle powder :) 


coleslaw

  • cabbage
  • shredded carrots
  • apple cider vinegar
  • dijon mustard
  • mayo - i gave in and used store-bought :( 
  • pepper
  • salt


mostly paleo meal except for a few ingredients ... mayo has soy in it and the beef broth in the bbq sauce had sugar, caramel coloring and other BS in it - wtf whole foods??? ... looks like i gotta make my own beef broth ...

overall, very tasty meal! :)

miyeok guk (korean seaweed soup)


i finally made one of the korean soups i like a lot: miyeok guk or seaweed soup ... its a very healthy soup full of calcium and iodine.

in michelle fashion (doing it my way), i also made the soup extra meaty and fatty :) since rice isnt on the regular diet, i need it to be filling, plus good grass-fed beef fat is good for you!


  • 4 grass-fed beef bone marrows boiled and simmered for hours
  • 2 beef shank slow cooked for 8 hours in the crock pot
  • dried seaweed
  • garlic
  • sesame oil
  • soy sauce
  • salt
  • pepper


we enjoyed this soup with some kimchi

KOOBIDEH!!!

i love this stuff and i had some ground beef so i chose to make some at home :)

normally, you use a long flat skewer, however, i did not have that and my mixture ended up not being finely ground enough and too mushy, so ... i just winged it and did it "michelle style"

as you will see in the pics below, they look like the "korbumplings" and yes, pretty much is the same concept except for some flavoring differences and what you eat with them

this is a first trial so i think it turned out pretty good for a first try, however, i would leave out the green onions next time and make sure i have some sumac. dill and lemon seem to be a decent replacement for the sumac though :) ... which i ended up adding on top when i ate them


beef koobideh:

  • ground beef
  • in a blender: yellow onion, half a purple onion, green onions, garlic, tumeric, saffron, pepper, salt and eggs


mix ingredients together and make into long ovals, then grill ... frequently flipping ... when they are done, squeeze lemon juice over them and enjoy!

squeeze lemon juice over ... i added some paprika sprinkle on top for color and flavor :)

you can enjoy with some mint leaves and raw onion or make a fabulous salad!

this salad tasted wonderful! spinach, mint, basil, cucumber, tomato, red onion, mushroom, jalepeno, onion sprouts, lemon juice, lime juice, olive oil, pepper, cayenne powder, paprika powder and dried dill

yes, another somewhat random meal but i think it worked very nicely :)

  • bone marrow cooked in a pan
  • no-rice sushi rolls: salmon, cucumber, carrot, radish, spinach, avocado, sprouts

a closer look at the bone marrow ... you eat the insides ... its very buttery!

beef, guacamole & artichoke


sometimes i just like to combine random food together because that's what i feel like eating or because its all we have in the frig! haha ... either way, you can still make a yummy meal!

here's the meal:

  • flat iron steak: marinated in finely ground black pepper, garlic powder and lime juice then grilled 
  • guacamole: avocado, tomato, jalepeno, garlic, shallot, lime juice and a tiny bit of salt
  • steamed artichoke with ghee-garlic dipping sauce

this is one of my favorite marinades right now! tastes so awesome on steak! :)

  • pork chops
  • napa cabbage
  • carrots
  • fresh ginger (lots)
  • garlic
  • white pepper
  • soy sauce

this tasted so amazing! the key flavors are the ginger and finely ground white pepper ... delish!

kor-bump-lings


tonight i made something craig and i call "kor-bump-lings" ... they are korean style dumplings without the rice wrappers grilled or bbq style :)

how to make them:
mix together ground beef, 3 eggs per pound (i use more eggs because there's no rice wrapper), finely chopped yellow onion, lots of green onions, garlic, ginger, red pepper, and some sesame seeds. then make into egg like shapes and grill ... eat with dipping sauce: soy sauce, vinegar, red pepper and sesame seed. yum!







we ate the korbumplings with home-made korean style raddish kimchi and seasoned cucumbers :)
