Beef knuckle bone broth

Bone broth is so good for you and soup is great during the fall winter time :) plus it's super simple to make - just takes time. 

Simply place knuckle bones in a large stock pot. Fill with water and set to low for 12 hours ish. Since the pot will be over heat for at least 12 hours, you want to be sure there's enough water to compensate for some evaporation. 



I usually have it on low all day and before going to bed I turn the heat off so that when I wake in the morning, the fat, scum and blood solidify at the top and is easy to scrap off. I use a cheap scrapper I got from the Asian market, it's great for this :) 



After scrapping the fat off, I set to low for one more day. You don't have to do it that long and 12 hours or until the broth has a nice milky white color is good enough. 

And you're done! Yummy bone broth! :)

Baked Pluots! (or plums)


Make two cuts in each pluot or plum, place in baking dish and bake at 350 for an hour. 

Very yummy! The fruit sugar and water seeped out and created a gelatin layer at the bottom of the dish that tasted and had the texture of a fruit roll up! Amazing! It was very tasty! Sweet and tart like cranberry sauce :)

Spinach

2 cups of water

Pasta Sauce and Veggies

I'm not sure what to call this - it's not really Paleo pasta but I do love the comfort of eating yummy pasta sauce with tons of meat and veggies so I'm calling it what it is :)

Organic pasta sauce with ground beef and veggies: zucchini and squash in this particular instance.

Sometimes I throw in carrots, broccoli, and/or bell peppers. It's so comforting. If I have some good raw pastured cheese I will put on top - not sure how good that is to do since it melts the cheese and may negate the raw part but it's pretty yum :)

Tropical Green Smoothie

Lately one of my favorite green smoothies I make in the awesome Vitamix!

Banana, frozen pineapple, spinach, kale, chard, coconut milk and water. Yum! :D

Spinach Mushroom Crustless Quiche and Pear salad with caramelized onions

Spinach mushroom crustless quiche - or frittata really since I cooked it in the iron skillet.

Pear salad with walnuts, raisins, caramelized onions on baby spinach and romaine lettuce with balsamic vinegar dressing.

How I drink coffee at home

I found a new way to drink my coffee and have every sip be hot! No more coffee getting cold from sitting in the cup - I use a very tiny cup so it's like I'm taking "shots" of coffee! Lol I love it! It's actually just an espresso cup haha but it works perfectly :)

Salmon, Asparagus and Yams

Iron skillet cooked salmon with fried salmon skin, sautéed asparagus in butter, with roasted yams in coconut oil. Nom nom! :D

Garlic Oregano Chicken salad

Garlic oregano chicken salad for lunch! Yum!!

Iron skillet cooked chicken with dried oregano, garlic powder, pepper and salt. On top of baby spinach, cucumber, mushroom, carrot, red bell pepper, tomato, olive oil and fresh squeezed lime juice.

Over medium eggs with spice sprinkle

It's breakfast time! And I've found a new favorite way to eat my usual breakfast - over medium eggs with spice sprinkle on top. The sprinkle is pepper, Celtic sea salt, Bragg organic sprinkle, garlic powder and cayenne powder :) super yum!

I'm baaaa-aaack!

I'm baaaa-aaack!

So some things have changed since my last post - i started working again and ... i got pregnant! You may have figured out by now, with a whole year and half since i stopped blogging that, yes, there is a mini-me in the world - i have a beautiful 10-month-old baby girl who i absolutely adore. here is a picture of her, Quorra:


And yes, she is a paleo baby! i ate paleo while i was pregnant and i am continuing to eat paleo while breast feeding and will continue to eat this way because i love it and the way it makes me feel :)

i am now a stay at home mommy, proud and grateful to be there for my baby. i have had so many things to share with you all, so i am very excited to be blogging again!
