beef shank with bone marrow and bok choy and chinese broccoli stir fry



yummy beef shank with some bone marrow and bok choy and chinese broccoli stir fry!

beef shank

  • cook in skillet on medium a few minutes each side flipping a few times and covered while cooking - total time 8 minutes approx.


stirfry

  • lightly sautee 3 garlic cloves chopped up and dried red pepper in coconut oil
  • add chopped up bok choy and chinese broccoli and stir
  • add teaspoon of ginger powder
  • add a few pours of tamari
  • add squeezed lime
  • cover and simmer for 5 minutes

country style ribs & italian style veggies


SonRise Ranch country style pork ribs cooked in crock pot for 8 hours with pepper and salt sprinkled on top with italian style veggies (all from farmers market!): broccoli, yellow squash, red bell pepper, mushroom, garlic, tomato, olive oil, italian spices and red pepper flakes.

king salmon steak & italian style veggies


king salmon steak baked in toaster oven for 10 minutes with "italian style" veggies: broccoli, green bell pepper, and tomato sauteed with olive oil, italian herbs and crushed red pepper and then covered to simmer for a few minutes. when i cook veggies, i like to be very gentle with the heat and keep the veggies lightly cook so they still have some crispness :)

chicken & veggie chana masala



i love indian food and one of the dishes i really love is chana masala. eating a paleo diet, i dont eat chickpeas, so i took the chana masala flavoring and applied it to something else!

of course, its an interpretation based on my research of what goes into chana masala. i think i got close to the taste ;)

chicken chopped up
broccoli
tomatoes
onion
garlic
coriander
cumin
cayenne
tumeric
paprika
ginger
salt
lemon
green chili
butter

stir fry in pan and cover to simmer for 5 minutes

yumminess! :)

meatloaf with baby broccoli and raw red bell pepper


the meatloaf recipe is based on the Everyday Paleo recipe for meatloaf

preheat oven for 350

mix 2 lbs of ground grass-fed beef with:

  • 2 eggs
  • garlic
  • onion
  • ground almonds
  • ground macadamia nuts
  • 3 tomatoes
  • basil
  • majoram
  • pepper
  • salt

oil up pan and put ground beef mixture into pan and form into a rectangular lump like a "loaf"

cook in oven for an hour

cook baby broccoli with ghee in pan on medium for 5-10 minutes stirring frequently and keeping covered

chop up red bell pepper

place all on a plate and serve!



also,  a great way to use left-over meatloaf - make a meatloaf salad!

quick beef with broccoli and carrots!


quick beef with broccoli and carrots!
  • cut beef skirt steak into slices
  • rub on beef: lots of ginger powder, garlic powder and ground pepper
  • chop up broccoli and carrots
  • optional: stir fry dried red pepper with oil for a few minutes
  • stir fry beef in skillet for a few minutes
  • add broccoli and carrots
  • optional: add soy sauce (if not add some salt)
  • optional: add white wine or sake
  • cover for 3-5 minutes
