jalapeño burgers!


these burgers came out soooo friggin good, i had to share!

jalapeño burgers

  • 2 lbs ground grass-fed beef from sonrise ranch
  • 2 eggs
  • 6 garlic cloves
  • 1 white onion
  • 3 jalapeños
  • 1 tablespoon black pepper
  • 2 teaspoons salt


  • finely chop garlic, onion and jalapeños
  • mix all ingredients with hands
  • make into patties
  • grill 1-2 minutes each side for medium rare inside or longer for more cooked
  • serve
  • enjoy! :)

i ate these as paleo burgers - basically with all the fixins and no bun. i also had them on top of salad which is always super yummy! :)

beef shank with bone marrow and bok choy and chinese broccoli stir fry



yummy beef shank with some bone marrow and bok choy and chinese broccoli stir fry!

beef shank

  • cook in skillet on medium a few minutes each side flipping a few times and covered while cooking - total time 8 minutes approx.


stirfry

  • lightly sautee 3 garlic cloves chopped up and dried red pepper in coconut oil
  • add chopped up bok choy and chinese broccoli and stir
  • add teaspoon of ginger powder
  • add a few pours of tamari
  • add squeezed lime
  • cover and simmer for 5 minutes

chipotle beef tacos


my favorite!!! beef tacos!!! yay!!! :D

SonRise Ranch grass-fed beef marinated in lime and chipotle grilled rare and sliced up to be wrapped up in cabbage or chard leaf with lots of "fixins" to add on the taco! chipotle flavor is awesome! i love me some spice! :)

new york strip & bone marrow with korean style salad


very yummy meal~

grass-fed beef new york strip grilled rare - 3 minutes on each side

bone marrow cooked in a skillet - 6 minutes each side

korean style salad:

  • greens
  • green onion
  • garlic
  • red radish
  • sesame oil
  • soy sauce
  • ground red pepper
  • sesame seeds

coconut soup & indian style ground beef


coconut soup was good but i think i need to do some adjustments :)

indian style ground beef was very yummy and i plan on using the recipe with some veggies next time!

heres the ground beef:

  • 1 tablespoon coriander & 1/2 tablespoon of anise smashed up with a mortar and pestle
  • dry toast coriander and anise and chopped up 1/4 onion in a skillet for a few minutes on medium
  • add grass-fed ground beef turn down to medium low and mash up and stir around the beef
  • add fresh basil leaves and let simmer for 5 minutes
  • add tablespoon of ground tumeric and stir in
  • add more fresh basil leaves
  • simmer for 5 minutes on low

serve and enjoy!!

  • ground grass-fed beef
  • egg
  • ginger
  • garlic
  • onion

on top of greens
sprouts
jalepeno
mushrooms
avocado
bacon
squeezed lime

rare flat iron steak with bok choy


steak:

  • rub grass-fed flat iron beef steak with garlic powder and pepper and squeeze whole lime over and let marinate for 20 minutes - 1 hour
  • grill steak 4-6 minutes on each side for rare steak

bok choy:

  • stir fry fresh chopped ginger, dried red pepper and oil in pan for a few minutes
  • add bok choy
  • optional: add soy sauce
  • optional: add white wine
  • cover and simmer for 5 minutes

serve and enjoy! yummy!!

meatloaf with baby broccoli and raw red bell pepper


the meatloaf recipe is based on the Everyday Paleo recipe for meatloaf

preheat oven for 350

mix 2 lbs of ground grass-fed beef with:

  • 2 eggs
  • garlic
  • onion
  • ground almonds
  • ground macadamia nuts
  • 3 tomatoes
  • basil
  • majoram
  • pepper
  • salt

oil up pan and put ground beef mixture into pan and form into a rectangular lump like a "loaf"

cook in oven for an hour

cook baby broccoli with ghee in pan on medium for 5-10 minutes stirring frequently and keeping covered

chop up red bell pepper

place all on a plate and serve!



also,  a great way to use left-over meatloaf - make a meatloaf salad!

quick beef with broccoli and carrots!
  • cut beef skirt steak into slices
  • rub on beef: lots of ginger powder, garlic powder and ground pepper
  • chop up broccoli and carrots
  • optional: stir fry dried red pepper with oil for a few minutes
  • stir fry beef in skillet for a few minutes
  • add broccoli and carrots
  • optional: add soy sauce (if not add some salt)
  • optional: add white wine or sake
  • cover for 3-5 minutes
